Step 1
1. Season ground or minced pork (1 tsp salt, 1 tsp pepper, soy sauce 1 tbsp, mustard)

2. Marinate for at least 30 minutes to 4 hours.

3. Scramble the eggs.

4. In a Large sauce pan or wok bring 2 tbsp of Extra Light Virgin Olive Oil or Vegetable Oil to a simmer.

5. Fry eggs to a soft scramble.

6. Set aside eggs and cover.

8. Add 2 tbsp of oil to pan and heat to simmer.

9. Add pork (ground or minced).

10. Add onion.

11. Use remaining salt and pepper to season mixture.

12. Let cook on medium to medium high covered for 5 minutes to allow onions to caramelize and meat to cook.

13. Add cold white or brown rice.

14. Add remaining soy sauce.

15. Add peas and carrots.

16. Stir through ingredients on medium heat. Let cook for 5-10 minutes until vegetables thaw.

18. Add 3/4 of scallions

19. Turn on low for 3 -5 minutes.

20. Put in dish; add sesame oil mix through and top with remaining scallions.
