Bacon Chickpea pasta (instant pot)
This pasta is Smokey from the bacon. Stretch the meat by adding chickpeas. The tomato paste makes it the perfect cold weather comfort food. Use Fresh or frozen spinach.

Instructions
Step 1
Set the instant pot to sauté. Sauté bacon and onion for a few minutes then add mushrooms and garlic, sauté a few more minutes. Add Italian seasoning, tomato paste and mix through. Add pasta, broth, chickpeas and pepper. Set to pressure cook for 8 minutes on high. Do quick release. Add spinach and maple syrup, stir. Add cheese if using.
