Ingredients
4 servings
1yellow onion
medium
1red bell pepper
halved, cored, and seeded
1zucchini
medium
1 x 8 ounceBaby Bella mushrooms
brushed clean and stems removed
¼ cupextra-virgin olive oil
¼ cupsoy sauce
preferably low sodium
3 tablespoonsbalsamic vinegar
4garlic cloves
minced
1 teaspoondried oregano
½ teaspoonground black pepper
Instructions
Step 1
Cut the onion and bell pepper into 1- to 1 1/2-inch square pieces and slice the zucchini into 1/2-inch-thick rounds.
Step 2
Place the vegetables and mushrooms onto the skewers, alternating ingredients to make 5 mixed skewers.
Step 3
Place them flat in a large rectangular baking dish
Step 4
and set aside.
Step 5
Vigorously whisk the remaining ingredients in a medium bowl (or large glass measuring cup with a spout) to emulsify the marinade, or use your hand immersion blender if you have one.
Step 6
Brush or pour the marinade onto the vegetable skewers, drizzling any remaining liquid over the top.
Step 7
Cover and marinate for 20 minutes or overnight, turning once halfway through.
Step 8
Preheat a gas grill to medium-high heat, around 425°F (or prepare charcoal fire) and place the skewers on the grill.
Step 9
Continue to brush the skewers with any extra marinade that dripped off in the bottom of the baking dish.
Step 10
After about 6 minutes, turn the skewers and brush again with any remaining marinade.
Step 11
Cook for another 6 minutes, or to desired
