Instructions

Step 1
To a large skillet over medium heat, add olive oil.
Step 2
Once hot, brown sausage slices for a couple of minutes on each side. Remove to a plate.
Step 3
Reduce heat to medium-low, and crack eggs into skillet.
Step 4
Cook for 3 minutes or until egg whites are almost set. Add salt, pepper and dried parsley. Top the eggs with sausage slices.
Step 5
Transfer to a plate and enjoy!
Step 6
For extra nutrition, feel free to add some mushrooms and cherry tomatoes.

Like it spicy? Feel free to add some dried chili peppers or hot sauce.
