Heartland Pork, Potato, and Apple Bake

Ingredients

1.25 poundspeppercorn pork tenderloin
premarinated
1 poundfrozen French onion oven-roast potatoes
1 cupunsweetened applesauce
chunky
2apples
cored, cut into walnut-size chunks
2 tablespoonsstone-ground mustard
Instructions
Step 1
Preheat the oven to 375°F. Coat a 17" x 11" baking pan or other large shallow baking pan with cooking spray.
Step 2
Place the pork, potatoes, applesauce, and apples in the pan. Toss to coat with the applesauce. Clear a diagonal strip in the center of the pan. Place the pork in the cleared space.
Step 3
Bake for about 45 minutes, or until a thermometer inserted into the center of the pork reaches 155°F and the juices run clear. Remove the pork to a cutting board. Let stand for 10 minutes.
Step 4
Cut the pork into thin slices. Stir the mustard into the potato-apple mixture.
