Instructions

Step 1
Roast the peppers in the oven at 180°C for 30 minutes until the skin is blackened and puffy. Transfer to a bowl and let cool for 10-15 minutes. Remove skin and seeds. Cut into strips.
Step 2
Slice the onion and mince the garlic. Cook for about 2mins in a large pot with olive oil.
Step 3
Add the linguine, broth, roasted red pepper, diced tomatoes, basil, crushed red pepper, and black pepper.
Step 4
Bring the pot to a boil over high heat, then reduce heat to medium-low and cover the pot. Stir the pot every couple of minutes to prevent sticking. Test pasta for doneness after 10 minutes.
Step 5
Remove the pot from the heat once the pasta is tender. If it gets too dry, add a little water and keep simmering.
Step 6
Add the cream cheese. Stir until melted and the sauce is smooth.
Step 7
Serve hot. Salt to taste. Bon appétit !
