Instructions
Step 1
In a large pot, heat the oil over medium-high heat. Add in the diced onion and cook until softened. Add in the garlic and cook for 1 minute
Step 2
Add in the sausage and cook breaking it up into small pieces, until completely cooked and browned, about 5 minutes.
Step 3
Pour in the chicken broth and scrape up the browned bits from the bottom of the pan.
Step 4
Stir in the tomatoes and bring the mixture to a boil.
Step 5
Once the mixture starts to boil, stir in the orzo, oregano, basil, red pepper flakes and black pepper.
Step 6
Cover the pot, reduce the heat to medium-low, and allow to cook for about 10-12, or until the orzo is almost cooked.
Step 7
Stir in the kale and allow to cook, uncovered for 2 minutes. (Kale has a better texture if you lightly massage it before adding it in)
Step 8
Turn off the heat and stir in the half and half and parmesan cheese. Keep stirring until the cheese has completely melted.
