Ingredients
8 servings
1 poundboneless skinless chicken breasts
cooked and shredded
1 Tbsolive oil
4 Tbsbutter
¼ cupall-purpose flour
1onion
small, chopped
2garlic cloves
minced
6 cupschicken broth
2 cupsmilk
1 cupcarrots
shredded
2 tspparsley flakes
salt
for seasoning
pepper
for seasoning
1 x 16 ouncesmini potato gnocchi
1 cupspinach
fresh, chopped
Instructions
Step 1
Inn large dutch oven or stock pot, melt butter and olive oil together.
Step 2
Add your onions, carrots and garlic and cook until onions become translucent
Step 3
Whisk in your our and let cook for a minute, slowly stir in your chicken broth and simmer until it starts to thicken up
Step 4
Meanwhile in pan cook your gnocchi according to package directions, drain & set aside.
Step 5
Add your milk to your veggie and chicken broth mix and bring to a boil.
Step 6
Stir in your seasonings.
Step 7
Once at a boil reduce heat and add your gnocchi, spinach and chicken. Simmer until heated through and thickened.
Step 8
Serve topped with grated parm
