Healthy Lemon Chia Muffins! (vegan, gluten-free)

Fluffy and tender, these muffins are to die for, and they're almost like the lemon poppyseed muffins you can commonly find in bakeries. I adapted this from Erin Lives Whole. 
Note: You can make your own oat flour by blending oats then sifting them through a fine mesh sieve. Make sure to measure after blending for best results!

Step 1
First, stir together the oat flour, baking soda, and baking powder.

Next, stir together the egg, vanilla, oil, honey, and lemon juice.

Add in the greek yogurt (to the liquid ingredients).

Add the wet ingredients to the dry, and only now add in the seeds and zest.

Distribute into 6 muffin liners, and bake at 350 degrees for 14-16 minutes. Let cool, then eat! Store in the refrigerator for a week or freeze for even longer.
