Ingredients

2 Tbspvegetable oil
1yellow onion
chopped
350glong grain rice
cooked
2 tspchipotle chilli powder
¾ tsphot chilli powder
¾ tspground cumin
¾ tsppaprika
½ tspflour
¼ tspsalt
garlic powder
onion powder
¼ tspred pepper flakes
¼ tsppepper
¼ tsporegano
250mlveg stock
1can diced tomatoes
0.5jalapeño pepper
1can red kidney beans
optional
300gchicken
meat alternative, optional
Instructions
Step 1
Bring a large skillet & vegetable oil to medium high. Add onion & sauté for 2 minutes.
Step 2
Add cooked rice & stir to combine with onion, stir for around 3 minutes to fry the rice.
Step 3
Add all seasonings, followed by veg stock, tinned tomatoes & jalapeño. Stir to combine & bring to a low boil.
Step 4
Once boiling reduce heat to low and simmer for 10-12 minutes until most of the liquid is absorbed.
