Instructions

Step 1
Preheat oven at 350F
Step 2
Grease 12 or bakers dozen muffin pan or line with paper baking liners.

Place zucchini in a colander over the sink to drain. Let sit while finishing next steps
Step 4
In a blender process the oats until they resemble flour. Transfer to medium bowl and add cinnamon and baking powder. Mix well
Step 5
In another another bowl combine egg, vanilla, coconut oil, applesauce, and honey. Stir to combine
Step 6
Press zucchini in the colander, draining any remaining liquid and add to egg mixture.
Step 7
Stir the dry mixture into egg mixture and mix until no dry spots remain. Fold in chocolate chips
