Instructions

Step 1
Whisk together the lemon juice, olive oil, Dijon mustard and garlic in a small bowl. Keep this in a small screw-top plastic pot or jar.
Step 2
Chop the yellow peppers, red onion and parsley. Cut the cherry tomatoes in half and drain the tuna. Combine these with the olives and spinach in a lunch box.
