Kofta Kabab Naan Wraps

A quick 30 minute meal - perfect for those long days during Ramadan or any day really. These were so good and is simply spiced. Make sure to warm up naan to wrap it all up in.

Ingredients
6 servings
1.5 lbsextra lean ground beef
½ cupparsley
1red onion
small, quartered
1tomato
3garlic cloves
1 ½ TbspArabic 7 spice
or use ground allspice
1 Tbspground cardamom
1 tspblack pepper
1 tspsalt
Sumac Onions
0.5red onion
sliced thinly
½ Tbspsumac
1 Tbspparsley
finely chopped
tahini sauce
3 Tbsptahini
1 Tbspyogurt
1 Tbsplemon juice
2 TbspWater
enough to thin it out
salt
to taste
Instructions
Step 1
In a small food processor, finely chop the parsley, red onion, tomato, and garlic. Add this mixture to the ground beef along with Arabic 7 spice, cardamom, black pepper, and salt. Mix everything well. Form in to small logs. Preheat griddle on medium high heat with 2-3 tbsp vegetable oil. Fry the kabab’s on each side (even the edges) for about 3-4 minutes. Let them rest covered for 10 minutes.
Step 2
In a small bowl toss together onion, sumac, and parsley.
Step 3
Make the tahini sauce by whisking tahini, yogurt, lemon juice, and water. I usually add water gradually until I reach the consistency I like. Add salt to taste.
Step 4
Make the wraps by smearing the tahini sauce on naan that has been warmed up, add 2-3 kabab’s, and some of the sumac onions. I love to serve this with pickled turnips, salad and fries to the side.
