Instructions

Step 1
In one bowl, whisk together egg whites and buttermilk. In another bowl, whisk together egg yolks and melted butter.
Step 2
Combine the two egg mixtures and whisk until thoroughly combined.
Step 3
Combine all dry ingredients into a separate bowl.
Step 4
Pour wet mixture over dry ingredients and mix just enough to moisten (THERE WILL BE LUMPS).
Step 5
Heat up a skillet and spray with cooking spray to prevent sticking
Step 6
Use ¼ cup portions to make pancakes. When bubbles begin to set around the edges of the pancake and the underside is golden brown, flip gently. Continue to cook for a couple of minutes until the pancake is set.
