Ham Egg Fried Rice

You can use any number of meats or seafood and veggies with this recipe and it'll still turn out fantastic. However, my favorites are onions, carrots, and peas with ham. I find other meats simply don't add as much flavor causing the end result to be much blander while the ham is salty and smoky and adds a lot to the overall flavor.
It is not strictly necessary to use sesame oil. You can substitute another oil like canola oil or even just use a little sesame oil for flavor.
It is 1000% necessary to use cooked rice you've let cool in the refrigerator first for at least a few hours if not overnight. The texture will not be correct if you use freshly cooked rice. When it cools has cooled to the point of starting to stick together in the shape of the container you've stored it in and being cold to the touch, it'll be good to use. The rice will then maintain its shape even while being reheated and chopped up rather than turning into a mushy mess.

Instructions
Step 1
Chop ham, carrots, and onions into small cubes.





Step 2
Add sesame oil to a skillet with veggies and ham and saute until onions are translucent.







Step 3
Whisk eggs in a bowl with soy sauce then pour into skillet and cook while stirring until you end up with a mix of scrambled eggs with veggies and ham.











Step 4
Lastly, add the cold cooked rice, chopping it up and mixing it with the other ingredients as it heats up. You may need to add more sesame oil to prevent stickage depending on how much is left in the skillet from previous cooking. Once thoroughly chopped up it should be sufficiently warmed up and can be served.
