Ingredients
6 servings
1 tablespoonolive oil
1red pepper
sliced
1yellow pepper
sliced
1 cupsugar snap peas
1 cupcarrots
sliced
1 cupmushrooms sliced
1 cupbroccoli
1 cupbaby corn
¾ cupsoy sauce
gluten free
3 teaspoonsgarlic
⅓ cupbrown sugar
3 teaspoonssesame oil
1 ½ cupschicken broth
3 tablespoonscornstarch
sesame seeds
1.5 lbchicken breasts
chopped into cubes
cajun seasoning
Instructions
Step 1
In a wok or large skillet, add 1 tablespoon olive oil over medium high heat. Add in chicken and cook thoroughly.
Step 2
When cooked, season the chicken with cajun seasoning.
Step 3
In the same pan, add in bell pepper, peas, carrots, mushrooms, and broccoli. Saute 2-3 minutes, until the veggies are tender.
Step 4
In a small bowl, whisk together soy sauce, garlic, brown sugar, chicken broth, sesame oil, and cornstarch.
Step 5
Pour sauce over the veggies and cook until the sauce has thickened.
Step 6
Garnish with sesame seeds
