2 cupscornstarch
1 cupflour
1 cuppowdered sugar
1 teaspoonbaking powder

2 teaspoonsvanilla

Step 1
In a large bowl add the butter and powdered sugar and mix well.

Add the sifted flour, baking powder, corn starch and mix well.

Step 3
Add the egg and begin to knead until all ingredients are well incorporated. Then add the vanilla and the lime zest. Leave the dough to rest in the fridge for 10 minutes.

Spread a little corn starch on your surface and start rolling out the dough to the desired thickness (I like mine on the thicker side) and cut out your cookies with a round cookie cutter.

When all cookies have been cut, bake them on a flat tray with baking paper.
Bake at 340°F (170°C) for 10 to 11 minutes.
Step 6
When the cookies have been baked, let them cool completely, and delicately we begin to fill the cookie sandwiches with the dulce de leche, and roll them in coconut.
For the final touch, dust some powdered sugar on top. Bon appetite!
