Instructions
Step 1
Add oil to pot on low. Add in curry powder and cook spices for about a minute.

Add onion and cook until they begin to become translucent. Add garlic and cook down about a minute.

Put in tomato paste and stir to evenly coat ingredients.

*add water in small amounts to prevent garlic from burning*

Put in bay leaves and thyme. Cook for a few minutes

Add masala.

Continue cooking down base until the rawness of the onions are cooked out, approx 20-30 mins. Keep adding water to prevent base from burning and scrape down the bottom of the pot occasionally.

Add in chicken and mix until coated evenly.
Step 9
Add potato. Cook for about 5-10 minutes.
Step 10
Turn the heat up to high and season with salt. Add desired amount of water and let the curry boil until potatoes are done.
