Instructions
Step 1
Cover chicken with plastic wrap and flatten until it is about 1/4inch thick.
Step 2
Mix a bowl of the flour, 1/2 tsp salt and 1/2 tsp of pepper.
Step 3
Dip chicken in mixture bowl until both sides covered.
Step 4
Heat oil in large skillet at medium heat.
Step 5
Cook chicken until both sides are golden and cooked through.
Step 6
Remove chicken from skillet.
Step 7
Add mushrooms to skillet and sauté on medium-high heat until water has evaporated and mushrooms are browned.
Step 8
Season mushrooms with remaining salt and black pepper.
Step 9
Reduce heat to to medium. Add wine until boiling or reduced in half.
Step 10
Add chicken stock and simmer for 5 minutes.
Step 11
Return chicken to skillet and garnish with parsley.
