Pecan Soy Smoothie

I love pecans including pecan pie, butter pecan ice cream, and pecan shakes. I wanted to create a drink that is smooth, creamy, and full-on pecan flavor with a low GI and glucose load for heart health. I subbed frozen avocado for frozen bananas to reduce the sugar content and increase healthy fat. Recipe inspired by Pecan Smoothie from Sadie Nardini's class in My Daily Om.

Instructions

Step 1
Peel and cube avocado and freeze for 1-4 hours. Blend the frozen avocado chunks with the rest of ingredients. Freeze leftovers and eat with spoon :-)
