Instructions
Step 1
Set a strainer in the sink and place carrot, leek, and pea strips in it.
Step 2
Pour boiling water over vegetables for about 12 seconds.
Step 3
Set vegetables aside.
Step 4
In a large nonstick skillet, heat oil over medium heat.
Step 5
Add vegetables, garlic, and rice and saute until heated through and fragrant, about 4 minutes.
(Don't crowd the pan; cook in two batches, if necessary.)
Step 6
In a small bowl, whisk together lime juice and pulp, honey, hot pepper sauce, peanut butter, basil, and mint.
Step 7
Add to rice mixture and toss well to combine.
Step 8
Serve hot as a side dish.
Step 9
It also makes an enjoyable main dish when accompanied by a clear soup and some wontons or egg rolls.
