Ingredients

For the tagine
2onions
large
1 Tbspground cumin
1 Tbspground coriander
1 Tbspground cinammon
3garlic cloves
peeled and crushed
1kglamb
boned, diced
400mlvegetable stock
2 Tbsphoney
1juice of lemon
5tomatoes
50gdried apricots
For the couscous
Instructions
Step 1
Preheat the oven to 160C
Step 2
Peel and slice the onions, then fry in oil in an ovenproof saucepan for 5 mins
Step 3
Add the garlic and dried spices. Cook for 1 min
Step 4
Add lamb, stock, honey, tomatoes, and lemon juice. Cover with a lid and place in the oven for 1 hour
Step 5
Add the apricots. Return to the oven for 30 mins
Step 6
Pour couscous into a measuring jug to work out its volume, then pour into a bowl with the sultanas, salt, turmeric, and spring onions
Step 7
Measure the same volume of boiling water and pour into the couscous. Cover and leave for 3 mins, then fluff with a fork and add the fresh coriander
Step 8
Serve the tagine with the couscous
