Ingredients

0.5 headred cabbage
shredded

1 bunchTuscan kale
shredded

extra-virgin olive oil

kosher salt

1heart romaine
shredded

2carrots
large, shredded

1 bunchesscallions
cut into ribbons
1garlic chicken breast
grilled, or leftover rotisserie chicken

1mango
diced or cut into matchsticks

1seedless cucumber
cut into ribbons with a vegetable peeler

½ cuproasted peanuts chopped

1 bunchcilantro leaves
small, coarsely chopped

2Hass avocados
ripe, halved and sliced, I like to keep the slices together on one end so I can fan them out and make a pretty presentation on top of the salad

lime wedges
for garnish

½ cupcrunchy peanut butter

2 tablespoonsrice vinegar

hot

1 tablespoonsoy sauce
