Curried chicken, brocoli and penne pasta bake

Instructions
Step 1
Cook pasta according to package direction but for half of the normal cooking time. Add broccoli during last two minutes of cooking. Reserve one cup of the cooking water. Drain and rinse with cold water. Set aside.
Step 2
Meanwhile preheat oven to 375F/190C. Coat a 13" x 9" glass or ceramic baking dish with cooking spray.
Step 3
Combine the onion, oil, curry powder, thyme and pepper in a small dish or measuring cup, preferably with a handle. Cover with plastic wrap, leaving a small vent, microwave on high power, stirring once, for 5 minutes, or until sizzling.
Step 4
Using a rubber spatula, carefully scrape the spice mixture into the prepared baking dish. Add the chicken, cottage cheese, parmesan cheese, pasta, brocoli, and reserved cooking water. Mix completely. Cover with foil. Bake for 30 minutes. Remove the foil. Bake for a further 20 minutes or until golden and bubbling.
