Vegan Walnut & Basil pate / paste!

Instructions

Step 1
Soak the walnuts for at least 2 hours.
Step 2
Blend the nuts in a food processor.
Step 3
Add the olive oil, lemon juice, salt and nutritional yeast.
Step 4
Blend while slowly adding the water. Start with 1 tablespoon of water and see how much you need for that creamy texture.
Step 5
Add the soy sauce as well.
Step 6
You have now created the base for the pate, and can add anything you like. For this recipe, I went with the sundried tomatoes and basil.
Step 7
It’s important to let the pate rest for at least 20 minutes before testing to see if you have to add more salt, basil, or tomato. (If you taste it immediately, it won’t have that much flavor).
Step 8
To make the perfect snack, cut a cucumber in half and hollow it out. Fill it with the pate and sprinkle some sesame seeds on top for a crunch. Enjoy!
