Blueberry Cheesecake Overnight Oats 🫐🍰
My take hopping on the overnight oats trend! This one is so delicious and made with JUST whole food ingredients.
Ingredients
Oats
- 1/2 cup rolled oats
- 1 tbsp chia seeds
- 1 tbsp ground flaxseeds
- 1 tsp ground cinnamon
- 3/4 cup almond milk
Yoghurt layer
- 1/2 cup plain yoghurt (I used plain Greek yoghurt but you could used plain coconut)
- 1 tbsp honey or maple syrup
Top
- 1 cup frozen blueberries
- 1 tbsp chia seeds
- Lemon zest
Method
1. Make the blueberry compote first, by heating the blueberries in a saucepan for 15 minutes, then allowing the mixture to cool, mashing it with a fork and then adding chia seeds. Set aside.
2. Mix all ingredients for the base together and pour into a large jar.
3. Mix together the yoghurt later and spread on top. Repeat for the blueberry layer. Add lemon zest.
4. Refrigerate overnight. Enjoy!
