This vegan lasagna combines some Scottish favourites like haggis, neeps and whiskey. It is a labour of love but worth the effort.

Instructions

Step 1
Make sauce.
Step 2
Melt butter and oil. Add onion and cook until transparent.

Remove from heat and mix well

Return to heat and add whiskey followed by milk/cream. Stir until incorporated

Add all cheeses and heat through until thick but pourable

Filling

Steam or microwave haggis

Brown mince and onion

Assemble

Add a thin layer of sauce to the bottom of a large square dish, just enough to cook the lasagna sheets
