Preheat oven to 350 F
Step 1
Line 8”x8” pan with parchment paper.
Step 2
In med. bowl, mix together oats, flour, cinnamon, baking powder, baking soda, & salt; set aside.
Step 3
In micro.-safe bowl, melt coconut oil (by putting it in microwave 15-20 sec.) Beat in eggs. Add in the maple syrup, peanut butter, & vanilla; mix until combined.
Step 4
Pour wet ingredients into dry; mix until just combined. Use rubber spatula to fold in chocolate chips.
Step 5
Spread mixture into pan. Bake (20-25 min.) until golden brown.
Step 6
Cool before cutting into bars.

Store in airtight container on counter (up to 5 days.)
