You can also add chopped celery and peas to this, as well as about a ½ c. red wine and 3 TBSP of tomato paste, but I wanted a true beefy flavor and this was spot on!

Step 1
In large crockpot, add everything except the potatoes, water and cornstarch. Cook on high for about 7 hours (I put it on at 8 am and served at 5 p.m.) Stir occasionally.
Step 2
3 hours before serving, peel and cube the potatoes
Step 3
2 hours before serving, add the potatoes. Make a slurry with the water and cornstarch and add to the crockpot and stir in. Stir occasionally.
Step 4
Serve with honey cornbread or a crusty bread.
