These muffins are absolutely delicious. They are very dangerous, as they are addictive and you might eat all of them at once.

Dry ingredients
1 ½ cupgluten-free flour
or any other gluten-free flour blend
⅓ cupcoconut sugar
1 ½ tspbaking powder
2 Tbspflax seed meal
Wet ingredients
¾ cupnon-dairy milk
½ cupapple sauce
or mashed bananas, or pumpkin
¼ cupmaple syrup
1 tspvanilla
1 Tbspapple cider vinegar

1. Pre-heat your oven to 375 F and line a cupcake tin with baking paper

2. In a bowl combine the flour, flax seed meal, baking powder, coconut sugar and stir.

3. Pour the non-dairy milk, maple syrup, apple sauce or other fruit puree, vanilla and fold in to combine.

4. Add in the raspberries and chocolate chips and fold in gently. I recommend smashing the raspberries lightly first. Otherwise they will create big pockets in the muffins.

5. Divide your batter evenly into 12 muffins, top with and chocolate chips (optional) and place in the oven to cook for 30 minutes or so until cooked through and golden.
