Pineapple stuffed French toast

Instructions

Jam

Step 1
Combine pineapple and sugar in small saucepan
Step 2
Boil over medium heat until thickened, about 20 minutes. Slightly mash the pineapple pieces once it's softened.

Cool jam in the fridge while you prepare the toast and custard

Stale the bread (if needed)

Heat oven to 275f.

Put bread on a foil lined sheet or an air frying basket and place in the preheated oven for 10 minutes until dry.

Remove and let sit while you prepare the custard

Custard

Step 7
Whisk together egg, milk, vanilla (or 2tsp pineapple liqueur if you have it), and cinnamon until combined in a large shallow dish.

Melt butter in a skillet on medium heat.
Step 9
Sandwich jam between two slices of bread
Step 10
Place sandwich in the custard. Wiggle and squish it slightly to help absorb custard. Flip and repeate until most of the custard is absorbed. Immediately use a spatula to put it in the skillet with the butter. Fry both sides until desired brown Ness.
Step 11
Top the completed toast with some more of the pineapple jam or some powdered sugar
