Instructions

Step 1
Preheat oven to 350°F. Grease a regular size 12 count muffin tin with cooking spray

Roughly chop spinach
Step 3
In a medium size bowl, whisk eggs. Add in crumbled turkey sausage and spinach and whisk again two evenly incorporate
Step 4
Evenly distribute egg mixture into muffin tins, filling each cup approximately half full
Step 5
Bake for 20 to 25 minutes until eggs or set in the middle
Step 6
Remove from heat and evenly distribute cheese on top of muffins
Step 7
Allow cheese to melt and use a spoon to gently dislodge muffins from tin
Step 8
Allow to cool on a cooling rack for at least a minute before serving, with a little salt and pepper to taste
Step 9
Store egg muffins in an airtight container in the refrigerator for up to five days. Microwave for 12 seconds to reheat
