Instructions

Potato wedges

Step 1
Wash the potatoes but don't peel, then cut into quarters or suitable wedge sizes. Place in a polythene bag and add 1 Tbsp Cajun seasoning and 50ml vegetable oil. Seal the bag and roll the wedges to coat them in oil and seasoning. Then place on a baking tray and cook in the oven for approximately 30 minutes gas mark 8 electric 230 fan 210, (ovens vary)

Thinly slice 2 shallots, and cut the pepper into small pieces. Heat 50ml vegetable oil in a pan and when hot add the shallots and pepper. Cook until softened but not charred. Then add 1 Tbsp Cajun seasoning and the jar of tomato pasta sauce. There is no need to add additional seasoning, all you need is in the Cajun seasoning.

Now place the King Prawns in the top of the sauce

Place the fish and prawn dish uncovered on a shelf above them and cook on for 15 minutes. Prawns will be pink when ready, test fish to make sure it is hot firm and flaky, when it is serve up. Potatoes will also be ready at the same time.
