Green Bean Chickpea Salad

Instructions

Step 1
Preheat oven to 400
Step 2
Place aluminum foil on baking sheet
Step 3
Wash and cut off ends of green beans; place on baking sheet then drizzle oil and season with salt and pepper.

Put in oven for 15-20 mins or until lightly roasted.
Step 5
Drain and rinse chickpeas in collander
Step 6
Whisk garlic, lime juice, olive oil, salt, and pepper together in a large bowl.
Step 7
Wash and halve the tomatoes then add to bowl.
Step 8
Take parsley leaves off stem and chop leaves then add to bowl.
Step 9
Halve the olives and add to bowl
Step 10
Slice sun dried tomatoes into slivers and add to bowl.
Step 11
Mix the ingredients in the bowl together; stir in chickpeas and green beans.
Step 12
Dish out salad and top with feta cheese.
