Instructions

Step 1
Trim away any extra fat from your beef ribs; instead of discarding it, use it to make beef tallow
Step 2
Short ribs should be cleaned with lime and vinegar. This step is not required
Step 3
Place your short ribs in a pot with some water as well as two slices of ginger. You'll be boiling this twice; the first time, boil it and skim off any scum that rises to the surface, and then let it simmer until the short ribs are just beginning to become tender; this took me about an hour and a half
Step 4
Add your seasoning after you've skimmed the surface and given your short ribs a chance to get slightly tender (oyster sauce, rice vinegar, soy sauce, msg, cooking wine, and sugar)
Step 5
This time, remove the lid and let the water boil out completely; this took me about 45 minutes to an hour
Step 6
Garnish with green onion and sesame seeds
