Ingredients

2 tablespoonsolive oil
1sweet onion
medium, diced
1 tablespoonminced garlic
1.5 PoundGround Beef
80% Lean 20% Fat
1 teaspoonkosher salt
Romaine Hearts
shredded carrots
red cabbage
sliced
Sauce
¼ cuplow sodium soy sauce
3 tablespoonsrice vinegar
3 TablespoonsGochujang Paste
1 teaspoonginger powder
1 teaspoonblack pepper
2 teaspoonscornstarch
Gochujang Mayo
Instructions
Step 1
To prepare our sauce, in a mixing bowl, add in Soy Sauce, Rice Vinegar, Gochujang Paste, Ginger Powder, Black Pepper, and Cornstarch. Mix all ingredients together, then set aside.
Step 2
In a skillet on medium heat, add in olive oil. Next, add in diced onion & salt and cook for about 2-3 minutes. Then, add in minced Garlic and cook for about 1 minute.
Step 3
Turn the heat up to medium-high, add in Beef and mix in with onions & garlic, break apart into crumbles, and cook for about 5 minutes or until cooked & browned. Once done, remove from the pan and drain excess grease.
Step 4
Add beef back to the skillet, pour sauce into the skillet, and bring to a low simmer. Simmer beef in sauce for about 2-3 minutes or until sauce is fully incorporated into beef.
Step 5
For Gochujang Mayo, in a mixing bowl, add in Mayonnaise, Gochujang Paste, Lime Juice and mix well.
Step 6
Add beef to romaine lettuce hearts and top with purple cabbage, carrots, green onions, and gochujang mayo.
