This jambalaya recipe is a mix of shrimp and Cajun sausage cooked with rice and vegetables with a zesty seasoning. An easy one pot meal that takes like something you’d order at a restaurant!

Instructions

Step 1
Prep work: Dice onion and pepper. Set aside (keep separate). Cut sausage into bite-sized pieces. Rinse shrimp in colander (per package instructions) to defrost.
Step 2
Brown sausage, set aside: Heat olive oil in a large pot over medium-high heat. Add sausage and onions, and cook, tossing occasionally until browned, about 5 – 6 minutes. Transfer to a plate lined with paper towels to drain, leave oil in pan.
Step 3
Add liquids, seasonings, and raw rice: Mix 5 cups of water, 2 tablespoons of oil, and Zatarian’s rice mix in a large pot.
Step 4
Boil then simmer mixture: Bring mixture to a light boil over medium-high heat. Reduce heat to low heat, add vegetables, cover and simmer about 15 minutes.
Step 5
Cook shrimp, set aside: Cook shrimp in skillet with garlic and remaining oil from sausage. Set aside.
Step 6
Add sausage: Stir in sausage and onion, and continue cooking in pot for 5 minutes.
Step 7
Add shrimp: Stir in shrimp, cover and continue to cook, about 4 – 5 minutes or until rice is tender.
Step 8
Remove from heat. Let stand for 5 minutes. Fluff with a fork before serving.
