Ingredients

¼ cuponion
diced
1 stalkcelery
diced
1 teaspooncoarse kosher salt
1 Tablespoonsolive
juice
can
32 ozBeef broth
or stock
10 ozfrozen mixed vegetables
1 cuprusset potatoes
peeled and diced
1 TablespoonRoady Beef Base
1 x 8.8 ozto serve Barley and Lentils
pkg, ready
½ teaspoonhot pepper flakes
¼ teaspoonblack pepper
crushed
Instructions
Step 1
1. In a pot, combine the olive oil, onions, celery, salt. Saute until onions are translucent.
Step 2
Add broth, V-8, vegetables, and Better -than-Boulion. Bring to a low boil and cook for 20 minutes.
Step 3
While the vegetables are cooking, microwave the barley and lentils.
Step 4
After the 20 minutes are up, add the barley and lentils, hot pepper flakes, and pepper. Stir to combine. Simmer for 10 more minutes.
KEEP AN EYE ON THIS. You may need to add 2 cups of water to keep it brothy..
Step 5
Serve with bread, crackers, or toasted cheese.
