Instructions
Step 1
Heat a oven to 180 degrees
Step 2
Half the sweet potatoes and rub in some olive oil before placing on a lined baking tray middle side up and putting them in the oven for 45 minutes
Step 3
Heat some oil in a frying pan and add the onion, garlic and chili, frying until soft
Step 4
Once the potatoes are done scoop most of the flesh into a large bowl leaving approx. 1 cm of flesh to hold up the skin.
Step 5
Mash the potato in the bowl and add the fried onion mixture, beans, sweetcorn, lime juice, spices and seasoning
Step 6
Scoop the potato mix back into the skins and top with some grated violife cheddar and place back in the oven for 10 minutes
Step 7
Serve with some smashed avocado, salsa, and fraiche.
