Instructions

Step 1
Bring a large pot of water to a boil and cook the pasta according to package directions. Before draining the pasta, reserve 1/2 cup pasta water and set aside.
Step 2
Add the almonds to a small dry frying pan and set over medium heat. Toast the almonds until they just begin to brown, shaking the pan as needed. Remove from heat and set aside.
Step 3
In a large skilled, heat the oil over medium-high heat. When hot, add the mushrooms, zucchini, onions, and garlic. Cook for about 10 minutes, until the veggies begin to brown. Stir in the tomatoes, Cajun seasoning and 1/4 cup reserved pasta water and heat through for 2 more minutes.
Step 4
Add the pasta and toss well adding the remaining 1/4 cup pasta water if needed to help the sauce coat the noodles. Garnish with toasted almonds.
