Mexican Lasagna
The name comes from my good friend, Odalis- my mom called it “Tex-Mex Casserole” growing up. This was always one of my favorite recipes!

Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
Brown meat with onions and black pepper. Drain well and return to skillet.
Step 3
Add chili, enchilada sauce, tomato sauce, and sour cream to skillet and combine, stirring as they heat (about 15 min).
Step 4
Layer crushed tortilla chips on the bottom of a 9”x13” or larger baking dish.
Step 5
Add 1/3 of the meat mixture, then add some shredded cheddar.
Step 6
Repeat layers twice.
Step 7
Bake around 15-20 min uncovered, until cheese has melted and casserole is bubbly.
