Ingredients
4 servings

600gbraising steak
or stewing, cut into 3-4cm chunks

1 Tbspolive oil
or rapeseed

1onion
medium, peeled and roughly chopped

3celery sticks
trimmed and cut into 2cm slices

300gcarrots
large, well washed, trimmed, halved lengthways and cut into 2cm slices

1 x 400gcan chopped tomatoes

1 tspdried mixed herbs

1beef stock cube
Instructions
Step 1
Preheat the oven to 180°C/fan 160°C/Gas
Step 2
Season the beef all over with a little salt and lots of ground black pepper.
Step 3
Heat the oil in a medium flameproof casserole, add the beef and onion and fry over a medium-high heat for 5 minutes, or until the onion is softened and beginning to brown.
Step 4
Add the celery, carrots, tomatoes and mixed herbs.
Step 5
Fill the empty tomato can with water and tip this into the pan (you'll need around 400ml water).
Step 6
Crumble over the stock cube and stir well.
Step 7
Bring to a simmer, then cover with a lid and cook in the oven for 2-2 1/4 hours, or until the beef is very tender.
Step 8
Remove from the oven and serve with lots of green veg - shredded Savoy cabbage or kale goes particularly well.
