Instructions
Step 1
Cook the rice as per the packet instructions.
Step 2
To poach the chicken, bring a large saucepan of water to the boil.
Step 3
Add the chicken to the water and wait for the water to come back up to a boil.
Step 4
Once boiling again, cover the saucepan with a lid, remove from the heat and leave to poach for 25-30 minutes.
Step 5
Once poached, remove and allow to cool slightly before shredding.
Step 6
To make the dressing, combine all of the ingredients in small bowl and whisk until smooth.
Step 7
Season to taste with sea salt and black pepper.
Step 8
To assemble the bowls, divide the rice, raw vegetables and shredded chicken across 2 serving bowls.
Step 9
Top with the avocado and salad dressing.
