Instructions
Step 1
Cook bacon fully on medium heat in a large sauté pan. Remove bacon and set aside. Do not clean the pan!
Step 2
Add asparagus to the bacon grease. Cook for 2 minutes.
Step 3
Add peppers. Cook for 2 minutes.
Step 4
Add onions and ham. Cook for 1 minute. Remove all veggies and ham. Set aside.
Step 5
Add flour to your grease and whisk until a thick roux forms. Add more flour if needed.
Step 6
Slowly add in milk and let simmer until thick, whisking consistency.
Step 7
Remove from heat and salt/pepper to taste.
Step 8
Grate cheese (if using block cheese) and chop bacon into small pieces.
Step 9
Place half of the potato slices into a round pan. You can do this decoratively or just toss them in.
Step 10
Cover with your sautéed veggies, ham and half of the bacon.
Step 11
Add half of your cheese and half of the sauce.
Step 12
Place the remaining half of your sliced potatoes. Again you can do this decoratively or just toss them in.
Step 13
In the center of the pan, pour in remaining sauce. Top with cheese and bacon.
Step 14
Cover with aluminum foil and bake at 350 for 1 hour.
Step 15
After the 1 hour, remove the foil and cook for the final 15 minutes. You want your cheese sauce golden and potatoes soft.
Step 16
Remove from oven and wait 10 minutes before service.
