Easy Chicken Bean Soup

Ingredients
10 servings
0.5rotisserie chicken
canned pinto beans
Canned garbanzo beans
canned black beans
Ortega chiles
Chopped
sliced black olives
rotel tomatoes
canned corn
chicken broth
½ ccelery
0.5white onion
1 Cupcauliflower Mushrooms
sliced, or substitute
1 tpoultry seasoning
1 TTumeric
2 Tlow salt soy sauce
1 TspSeasoning
1 TspGarlic powder
unsalted
fresh ground pepper
1 Tfresh parsley
or dried
1 tolive oil
Instructions
Step 1
In a Dutch oven
Step 2
Sauté white onion and celery in olive oil until brown.
Step 3
Add mushrooms, sauté add seasonings
Step 4
Add about 1/2 to 1 can of each of the beans and black olives
Step 5
and 1 can ortega chiles.
Step 6
Add 1 quart of chicken broth.
Step 7
Add 2-3 cups of cooked chicken cubed
Step 8
You can add the chicken bones with skin for extra flavor.
Step 9
Cover and bring to a boil. Reduce heat
Step 10
and simmer for about 1 hour.
