Bacon, Date and Goat Cheese Pop Tarts

These savory pop tarts are all about the bacon and date jam filling. It’s sweet, it’s salty, it’s oniony and the creamy goat cheese and flaky pastry are the perfect pairing for it!

Step 1
Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper.
Step 2
Cook bacon in a large skillet over medium low heat until just cooked through. Try not to get it too crispy. Transfer to a paper towel-lined plate to drain.
Step 3
Cook onions in bacon fat over low heat until caramelized, about 30 minutes, stirring frequently. Season with a pinch of salt and pepper.
Step 4
While onions are cooking, add dates to a small saucepan with 1 cup water and bring to a boil. Boil for 4-5 minutes until softened then remove the dates from the water and let cool. Continue to boil the date water until it turns into a syrup, about 3-4 minutes. Remove the skin from the dates once cooled.
Step 5
Whip goat cheese with a splash of milk in a food processor until smooth. Add to a piping bag or ziplock bag. This is optional but I find it easier to add to the pockets.
Step 6
Once onions are caramelized, add the dates to the skillet and mash with a wooden spoon to form a paste. Add the date syrup and bacon and stir until combined. Take off the heat and cool slightly.
Step 7
Beat the egg in a small bowl. Flour your work surface and roll out the puff pastry sheets. Cut each sheet into 8 rectangles. Place 8 of the rectangles on lined baking sheets, spacing 1-2 inches apart. Add a heaping tablespoon of the date jam to the center of the pastries, leaving about a 1/2 inch border. Pipe or spoon the whipped goat cheese down the center.
Step 8
Brush the edges of the pastries with egg wash and top with the remaining 8 pastry sheets. Press around the filling to push out any air that is trapped inside. Crimp the edges with a fork to seal. Brush the tops with egg wash and bake for 23-25 minutes or until golden brown. Rotate baking sheets if some tarts are browning quicker than others.
