Enchilada Casserole

Notes: **add sliced olives and more meat This was a low-carb recipe. Here's the info on (carbs in parentheses): ground beef (0) onion (7) La Preferida enchilada sauce (4) cheese (7) La Tiara taco shells (3.5 each=31.5) jalapenos (4) 49.5 total carbs 12.375 carbs per serving (w/out jalapenos)

Instructions

Step 1
Preheat oven to 350 degrees.
Step 2
Saute onions in butter until translucent.
Step 3
Add ground beef and brown until crumbly, season with salt and pepper (drain if needed).
Step 4
Spray a 2 quart casserole dish with a non-stick cooking spray.
Step 5
Layer beginning with 1/3 of meat-onion mixture, 1/2 of the taco shells (broken in pieces), 1/3 meat mixture, 1 c. enchilada sauce, 2 c. cheese, the remainder of taco shells, remainder of meat mixture, remainder of enchilada sauce and cheese.
Step 6
*optional: add 1/4 c. jalapeno slices.
Step 7
Bake at 350 degrees for approximately 30 minutes or until bubbly. Let stand for 10 minutes.
Step 8
Serve with sour cream and additional hot sauce if desired.
