Instructions
Step 1
Heat a large non-stick frypan over medium heat. Cook onion and capsicum, stirring occasionally, for 5 minutes until soft.
Step 2
Add mince and mushrooms and cook for a further 5 minutes until browned.
Step 3
Add spice and tomato paste and cook for another minute until fragrant. Add ½ cup water and simmer for a few minutes until thickened. Adjust seasoning.
Step 4
Place 2 tortillas on each serving plate. Add lettuce, mince and cheese to serve.
