Instructions

Step 1
1 Preheat the oven to 160°C/Gas 3/fan oven 140
Step 2
Heat 2 tablespoons of the oil in a large flameproof casserole until very hot.
Step 3
Brown the meat in 2-3 batches, removing each batch with a slotted spoon.
Step 4
Add the remaining oil, the onions and garlic. Cook on a low heat for 10 minutes, stirring now and then, until the onions soften.
Step 5
Add the meat and juices and blend in the paprika, tomato purée, vinegar, herbs, bay leaves and caraway seeds.
Step 6
Tip in the tomatoes, add the stock, season and bring to the boil, adding some water if the meat is not covered. Stir, cover, and put in the oven for 2½ hours, or until the meat is tender.
Step 7
Halfway through, stir in the red peppers. Serve with dollops of soured cream.
