Step 1
First of all prepare coffee (a lot) and let it cool. Separate the egg yolks from the egg white (keep the egg white on the side). Mix the egg yolks with the sugar until really creamy. Add mascarpone cheese to the egg yolk and sugar mixture and mix together.
Step 2
Beat the egg white until fluffy (I'm sure there's a specific term for this. The egg white should look like snow).
Step 3
Add the egg white to the egg-sugar-mascarpone mixture. When mixing it is REALLY IMPORTANT that you mix it up to down so that the egg white do not un-fluff. I'm sure you know this technique! I remember you knew about it!
Step 4
Add some amaretto to the cream
Step 5
You have to alternate layers of biscuits dipped in coffee and layers of cream
